27. Uttarakhand
The food of Uttarakhand is also known as "Pahari food". The cuisine can be categorised into "Kumaoni Cuisine" and "Garhwali Cuisine" as the entire state is divided into these two regions! The food of Uttarakhand includes vegetables, wheat and lentils - out of which wheat is the staple food.
The state gives you a tasty, mouth-watering "Bhang ki Chutney" that is prepared with the seed of the Cannabis Plant. The state is rich in many herbs and agricultural products and some dishes require unique iron pots to prepare. The foods are very simple and not very spicy and since the state shares borders with China, Nepal and Himachal Pradesh, the influence of their cuisines is palpable.
The Union Territories of Jammu, Kashmir and Ladakh
Though J&K is now reduced to the status of a Union Territory after the scrapping of Articles 370 and 35A, I'm listing it here, for the time being, to understand the famous foods of that place. It's known as the 'paradise of earth' and is a snow-laden area. The effect of geographic conditions can be seen in Kashmiri Cuisine. Meat is popular and the cuisine also includes Rice, Yogurt, Vegetables. Meat and rice form the staple food of the state. Kashmiri Mirch is famous all over the country due to its colour. Since most of the area is snowbound, it is difficult to cultivate food and that's why the majority of the population are meat eaters.
